Dark Rum Sourdough Banana Bread

Ingredients

Yield: 1 loaf

Ingredients

Wet ingredients:

1 125 g mashed ripe banana

2 100 g sourdough starter (discard or active)

3 125 g brown sugar

4 125 g olive oil or neutral oil

5 2 eggs (~100 g)

6 5 g vanilla extract

7 15–20 g dark rum

Dry ingredients:

1 225 g all purpose flour

2 5 g baking soda3 3 g fine sea salt

4 3 g ground cinnamon

5 Pinch ground cloves (optional)

Rum syrup (finish):

1 30 g dark rum

2 20 g sugar

Steps

1 Step 1: Prep

Preheat oven to 350°F. Grease or line loaf pan.

2 Step 2: Banana base

Mash bananas and mix with sourdough starter until smooth.

3 Step 3: Wet mix

Whisk eggs, brown sugar, oil, vanilla, and rum until smooth.

4 Step 4: Combine

Add banana mixture into wet mixture and mix.

5 Step 5: Dry ingredients

Mix flour, baking soda, salt, cinnamon, and cloves separately.

6 Step 6: Fold

Fold dry ingredients into wet mixture gently.

7 Step 7: Bake

Pour into pan and bake 55–65 minutes until done.

8 Step 8: Cool slightly

Rest 10 minutes in pan, then remove
